Quail eggs with tomato sauce

  • 24 quail eggs
  • 40ml tomato paste
  • 1 tablespoon sugar (about 15g)
  • 100ml vegetable oil
  • 10g salt
  • a little roasted sesame and spring onion

After boiling the quail eggs in salted water, put them in cold water and peel. Then wash the quail eggs and dry them with kitchen paper.

  • Put 100ml vegetable oil in a small pan and heat. Add the quail eggs and fry until the surface is golden brown.
  • Remove the quail eggs from the pan, pour the oil except for a small rest.
  • Add sugar and stir until it is caramelized, then add the tomato paste, stir fry until the sauce becomes firmer. Add the quail eggs and distribute the sauce evenly.
  • After placing the quail eggs on a plate, sprinkle with sesame and spring onion.
